Crispy Banana Snack (“bánh chuối phồng”) is the first product and signature line of Tư Bông, on the market since 2013. It is sun-dried Lai Vung banana, candied with ginger, spread over a toasted glutinous-rice puff sheet, rolled tightly and cut into bite-size pieces. It comes in four flavours — peanut, sesame, cashew and durian — with peanut as the original.

The line originated from a family Tết (Lunar New Year) banana-jam recipe in Lai Vung, Đồng Tháp. Per the source, Tư Bông was not the first family to make rolled banana jam on puff sheet, but was the first to commercialise it for the retail market.

Production

Ripe Lai Vung banana is pressed flat, laid on woven coconut-frond racks and sun-dried for 2–3 days, then cut into strips and candied with sliced ginger. Off the heat, peanut, sesame, cashew or durian is folded in; the mix is spread over a toasted glutinous-rice puff sheet, rolled tightly, cut into pieces and packed. The reformulated recipe reportedly reduces sweetness and moisture versus the traditional version so the rolls keep longer.
